Ground Venison Options

Most Texas processors offer multiple grind options, often mixed with fat for moisture. Our experience has taught us that mixing a 50% mix of pork fat is not just the minimum, but the optimum ratio of pork to ground products. All processing prices reflect that ratio.

How Minimum Product Amounts Work

Fat Boy Yum does not batch its products during processing. Your game is never mixed with another customer’s game for efficiency; thus, some products require a minimum amount of game meat to yield a batch of the product you ordered. This is best demonstrated with the following scenario:

You shot a Texas whitetail buck. That animal will yield between 30 and 40 lbs of useable meat for your order. In your case, your animal’s yield is 38 pounds. When you drop off the game, you order.

With 8 pounds of venison remaining, the customer can choose one of the following options:

  • Make the remaining 8 lbs of meat into Ground Hamburger (or Chili Meat).
With 10% added pork fat, this will yield 8.8 pounds of vacuum sealed Ground Hamburger meat.
With 20% added pork fat, this will yield 9.6 pounds of vacuum sealed Ground Hamburger meat.
  • Make the remaining 8 lbs. of meat into Venison Jerky
  • Make the remaining 8 lbs. into 20 lbs of Pan Sausage by adding 12 lbs of pork to yield the minimum 20 lbs. of Pan Sausage.

Ground Venison Options

  • Regular Ground Venison (super-lean)
  • Ground Venison with Pork Fat (very common)
  • Ground venison with Beef Fat
  • Packaged as 1–2 lb vacuum‑sealed bags

Stew Meat & Chili Meat

  • Texas‑style chili meat (larger, hearty chunks)
  • Packaged as 1–2 lb vacuum‑sealed bags

These are best when taken from the neck and shoulder trimmings.
